Australian and Japanese Wagyu: A Culinary Treasure

Welcome to a world where beef is not just food, but a luxurious experience. At the heart of our menu lies the esteemed Australian and Japanese Wagyu, celebrated for its unparalleled quality, flavor, and texture.

What is Wagyu?

Wagyu, meaning ‘Japanese cow’, refers to several breeds of cattle genetically predisposed to intense marbling and to producing a higher percentage of unsaturated fat. The meticulous care and diet these cattle receive result in beef that is extraordinarily tender, richly flavored, and marbled with fat that melts at lower temperatures than other beef.

Australian Wagyu

Australian Wagyu combines the traditional Japanese Wagyu genetics with the robustness of Australian cattle breeds. It’s produced in a pristine environment and is known for its consistency in quality. While it has the signature marbling, Australian Wagyu offers a slightly different texture and a bolder beef flavor compared to its Japanese counterpart.

Japanese Wagyu

Originating from Japan, this Wagyu is in a league of its own. The most famous Japanese Wagyu prefectures, like Kobe, Matsusaka, and Ohmi, adhere to strict breeding and feeding programs. The result? A melt-in-your-mouth texture and a delicate, sweet, umami-rich flavor that’s incomparable.

Why are they prized over American Beef?

The main difference lies in the marbling. While high-quality American beef, like USDA Prime, does have marbling, it doesn’t come close to the level found in Wagyu. This marbling not only enhances flavor but also makes the meat tenderer and juicier. Wagyu beef’s fat is also healthier, with higher proportions of monounsaturated fats and Omega-3s.

The BMS (Beef Marbling Score)

Wagyu beef is graded, among other factors, on its level of marbling. The Beef Marbling Score (BMS) ranges from 1 to 12, with 12 being the highest and most luxurious grade. A higher BMS means more marbling, translating to a richer flavor and more tender meat. Our menu features Wagyu with various BMS ratings, allowing you to experience a range of flavors and textures.
